Summer Berry and Avocado Salad with Lemon Poppy Seed Dressing

Ingredients

1 cup strawberries, sliced

1 cup blueberries

1 avocado, sliced

1/4 cup crumbled feta cheese (optional)

1/4 cup sliced almonds or pecans

1/4 cup red onion, thinly sliced


For the Lemon Poppy Seed Dressing:

 

1/4 cup fresh lemon juice

1/4 cup olive oil

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

1 teaspoon poppy seeds

Salt and pepper to taste


Directions

Prepare the Salad:

 

In a large bowl, combine the mixed greens, strawberries, blueberries, avocado slices, crumbled feta (if using), sliced almonds or pecans, and red onion.

Make the Dressing:

 

In a small bowl or jar, whisk together the lemon juice, olive oil, honey or maple syrup, Dijon mustard, poppy seeds, salt, and pepper until well combined.

Assemble the Salad:

 

Drizzle the lemon poppy seed dressing over the salad just before serving. Toss gently to combine all the ingredients and coat them with the dressing.
